Cinco de Mayo


Laura & Abe hosted a Cinco de Mayo Party on Cinco de Mayo!



Abe was so excited to wear his authentic Mexican gear!


The host & hostess!! This was their first party to throw as a married couple! :)


Jodi went by to pick up some chips & salsa for the party from El Sombrero! We were impressed with El Sombrero's chips...there were red & green chips in the mix! Jodi said it was a madhouse at El Som! 
  


We also had to play "Mexican Train" dominoes!! I am addicted!

Happy Birthday, Kristen!

Kristen had a birthday on April 19th but we weren't able to celebrate until last week!! (There are LOTS of APRIL birthdays on my calendar!! :) ) I met her in Jackson and we had a fun girls' night out!!

We ate dinner at Sombra Mexican Kitchen! They adorned Kristen with a sombrero!!


The waiter took a pic and made Kristen a frame! Her face in this picture is priceless!!


After a fabulous dinner, we headed to the movies to see Titanic...in 3D! I remember seeing this when I was in 9th grade. I have seen it a few times since, but I didn't remember all of it!! I honestly loved it and thought it was a great movie for our girls' night out!

A Night in Italy


I hosted "Girls' Night" at my house this month! These girls are in my bunco group that is no longer playing bunco, but still meeting once a month to "hang out!" I didn't really have an activity planned so I decided to have a themed dinner...."A Night in Italy!"

I spent a summer in Italy during college and I vividly remember all of the cafes & restaurants having lots of red and white checked tablecloths as well as candles lit on every table. In order to create that same atmosphere, I had to get crafty! I decided to create my own wine bottle candle holders. Every night for a couple of nights, I would let a candle melt to create the layered wax effect.




I also would just melt a candle on the side of the bottle and that worked well too!!


I only burned my fingers a few times! :)




My Mom gave me some tablecloths she had on hand, and she cut ivy off of the side of my parents' house for a final touch! I was excited about how this all came together and for absolutely no cost-everything was already on hand!


Whenever I host something at my house, I always feel like I miss out on the fun becuase I am in the kitchen getting the food ready so this time, I prepared as much as possible in advance so I would be able to visit with the girls!

Italian Bread Slices

I just cut italian bread into small slices then covered these in olive oil & garlic salt! I popped them in the oven for about 10 minutes...flipping once! I thought these were perfect for spreading on the pizza dip!

Tiramisu


I have a "go-to" Tiramisu recipe that I normally use, but it contains mascarpone cheese - which can be hard to find and raw eggs! Since my friends are in the "making & having babies" stage of life, I thought I would steer clear of raw eggs! I found this "Easy Tiramisu" recipe on marthastewart.com! I gave it a whirl, and thought it turned out to be pretty tasty! This was also a great recipe becuase it was a make ahead dish!

Easy Tiramisu
3 tablespoons instant espresso powder
1 bar (8 ounces) reduced-fat cream cheese
3/4 cup heavy cream
1/3 cup sugar
2 packages (3 ounces each) soft ladyfingers
Unsweetened cocoa powder, for dusting

Directions

1.In a medium bowl, mix espresso powder with 3 tablespoons boiling water until dissolved. Add 1 1/2 cups cold water; set aside.
2.With an electric mixer, beat cream cheese with heavy cream and sugar until light and fluffy.
3.Spread a few tablespoons of cream-cheese mixture in the bottom of a 2-quart serving dish. Separate ladyfingers. One by one, dip a third of ladyfingers in espresso, then arrange in bottom of dish. Spread with a third of cream-cheese mixture. Repeat twice with remaining ladyfingers, espresso, and cream-cheese mixture (can be refrigerated, covered, up to 1 day).
4.Dust with cocoa just before serving.




I had so much fun getting together this "Night in Italy" themed dinner!
I can't wait for more fun dinners with my sweet friends!!

Happy Birthday, Mom!

Today my Mom turns 68! We were able to celebrate her birthday with lunch at my house on Sunday! 

Isn't she cute!?!


She opened lots of presents and of course, we had a cake!!

We also celebrated Max's birthday! He turned 7 on Saturday, April 21st!!



This was a dog friendly cupcake I found at the new pet store in Vicksburg!


He seemed to like it!


Max got lots of presents too!!!

Happy Birthday, Rob!


Today is my little brother, Rob's, 25th Birthday!

Rob won't be able to celebrate with his family & friends this year...a few months ago, he decided that he wanted to hike the Appalachian Trail. It is a 2,100 mile hike starting in Georgia and ending in Maine! He started his journey a few weeks ago on April 7th, 2012!

There were lots of things he had to do to prepare for his journey!

One time I walked in his room and he was watching a YouTube video tutorial on making a stove out of a can!


He also ordered lots of gear including this suit to keep him dry!


This is what he will be eating over the next couple of months. This food was divided into boxes and my parents will ship it to him throughout the trail! Obviously he will eat more, but this was just to get him started!


We also celebrated his birthday early and the family had a "send off" party!!


We went to his favorite restaurant, Rusty's, for his "last meal!
This was the last night I saw him before he left!!

My Dad drove Rob to Atlanta and they picked up one of Rob's best friends, Rusty. Rusty hiked the first few days with Rob to get him started! This is Rusty and Rob at Amicalola Falls State Park...the beginning of the Appalachian Trail!
